Because flavour perception emerges from the integration of gustatory, olfactory, and contextual cues, it provides an ideal test case for expectation-driven effects. For example, unexpected labels (e.g., “smoked salmon ice-cream”) enable us to examine how language recalibrates hedonic evaluation, shifts sensory weighting, and reshapes perceptual experience in real time, sometimes even before the first bite.
